This Ramadan in Dubai, Emirates Golf Club presents a refined Iftar experience at the Royal Majlis, created in collaboration with acclaimed Chef Zahra Abdalla and Executive Chef Dayan Anthony.
Bringing together Arabic and Iranian culinary traditions, the curated menu reflects heritage, storytelling, and contemporary craftsmanship. Each dish draws on personal memories, regional flavours, and a conscious approach to sustainable, zero-waste cooking.
As sunset settles over the championship greens, the Royal Majlis becomes an elegant sanctuary for gathering. Lantern light, live oud melodies, and warm hospitality create the perfect setting for reflection and togetherness throughout the Holy Month.
A Ramadan Menu Inspired by Memory and Meaning
Chef Zahra’s culinary philosophy centres on culture, comfort, and connection. Her Afghani Mantu pays tribute to childhood memories of handmade dumplings, delicately steamed and served with yoghurt and a rich split pea and tomato sauce.
The Saffron Chicken with Freekah celebrates the blending of Persian and Palestinian home kitchens, while Beetroot Bil Zeit showcases mindful cooking by using both root and leaf in a thoughtful vegan creation.
The Iftar journey begins with a vibrant selection of mezze and seasonal salads, including roasted cauliflower, pumpkin, kale and freekeh, alongside reimagined classics such as a locally sourced Hummus Trio and fresh Fattoush.
Vegetarian highlights include Fattat Beitinjan and whipped feta with date molasses caramelised carrots, finished with pistachio pesto made from carrot tops. For heartier appetites, Kabab Torsh short ribs are slow-braised for six hours and paired with silky celeriac purée. The experience concludes with choux pastry served with saffron and pistachio ice cream, offering a refined nod to regional flavours.
