Executive Chef

Hailing from Malta and having worked there as well as in London, Hamburg and Dubai. Nicholas fuses his strong Mediterranean influence with various cooking styles including French, Arabic and South Asian cuisine, to create unique and fresh flavours.

Nicholas has over 17 years' of experience behind him at some world-renowned establishments including Intercontinental Malta, Hilton St James Park London, Crown Plaza Hamburg, Crown Plaza Dubai, One & Only Royal Mirage Dubai, Radisson Royal Dubai and Dubai Creek Golf & Yacht Club and he now brings his wealth of culinary expertise to Emirates Golf Club.

His culinary style reflects the growing trend towards a healthier and more down-to-earth lifestyle and in addition to cooking, Nicholas' passion is to work with younger chefs and develop their talents in the same way that he was encouraged.
